TRADITIONAL SNOEK BRAAI WITH LIEZEL VAN DER WESTHUIZEN



Food is one of the most beautiful forms of art… I started this segment on my blog to try to build a bridge from clothing to the culinary world while allowing you a glimpse in the lives of our favorite Fashionistas

As only the second woman in the world to present Idols and one of the familiar faces of the breakfast show morning Expresso, Liezel van der Westhuizen is currently taking the South African entertainment scene by storm. The relaxed smile, smooth and professional working manner and impeccable style have made her one of the most sought after presenters and emcees in the country. Coupled with a drive for success and an incredible work ethic in everything she does, it is no wonder the sky is the limit for this talent.


It wasn't a surprise when the acclaimed radio presenter, actress, Vlogger and endurance athlete was voted twice in a roll in the FHM Hot 100 Sexiest Women in the World, while a nomination in the Heat Hot 100 came in both years as well. Nor was it a surprise that she was on Simon Rademan’s best dressed women in 2008 and was nominated for an Olay style icon award.






TRADITIONAL SNOEK BRAAI

Serves 6, Recipe by Chi Town Braaisters


Ingredients:
             2 large snoek, butterflied
             Salt and pepper

Apricot snoek:
             2 Tbs olive oil
             2 cloves garlic, chopped
             ½ cup apricot jam
             ¼ cup orange juice

Tomato and onion snoek:
             1 onion, sliced
             2 tomatoes, sliced
             Dried Oregano
             4 Tbs olive oil



Method:

STEP 1:  Dry the snoek to remove any excess moisture then season with salt and pepper.

STEP 2:  Make the apricot glaze by putting all the ingredients into a pan and heating until the
 jam is melted.

STEP 3:  Brush the glaze over one of the snoek and place on the braai. Cook on both sides,
            turning and basting occasionally until the fish is cooked.

STEP 4:  Combine the onion, tomatoes, oregano and olive oil and season.

STEP 5:  Place the onion mixture into the snoek and fold over to secure (you can tie it with
            string if you wish).

STEP 6:  Drizzle with oil and place the fish on the braai, cook while continuously turning the
 fish.

STEP 7:  Serve both with a simple side salad.
